The spring of 2021 was warm and led into one of the warmest growing seasons on record. This warm and dry weather limited the yield of berries which in turn meant the ones that grew were exceptionally concentrated. The berries were whole pressed in clusters and then sent to ferment in Stainless Steel and Oak barrels. Once fermented the wine was cold settled before blending. The final blend was aged for three months on fine lees before bottling.
There are elegant aromas of lime, lychee, honey and candied ginger. This wine pairs well with spiced dishes and can be drunk now or within the next three years.
